Position: Butcher / Catcher
Responsibilities:
- Perform precise cutting, portioning, and preparation of all meats and poultry.
- Ensure all cuts meet the required standards and specifications for the resort’s menus.
- Maintain strict adherence to hygiene and safety protocols in the butchery.
- Manage inventory of raw meat and minimize trim waste efficiently.
- Properly store and rotate meat products to ensure freshness and quality.
Qualifications:
- Proven experience as a Professional Butcher or Catcher, preferably in hospitality.
- Expert knowledge of various cuts of meat, preparation techniques, and yielding.
- High standard of hygiene and safety knowledge in a butchery environment.
- Ability to work efficiently and accurately under production deadlines.
- Strong organizational skills for meat inventory management.
- Commitment to minimizing waste and maximizing yield.
- Willingness to support the high standards of a 5-star kitchen in Anyer.
