Position: Sous Chef – Butcher

Responsibilities:

• Manage the hotel’s butcher shop, overseeing all meat and seafood preparation.
• Ensure all proteins are portioned, prepared, and stored according to the highest standards.
• Train and supervise the butcher team in proper cutting techniques and safety procedures.
• Manage inventory, ordering, and quality control of all meat and seafood products.
• Maintain a clean, sanitary, and organized butchery, adhering to HACCP standards.

Qualifications:

• Proven experience as a Head Butcher or Sous Chef in charge of butchery in a large hotel or food service operation.
• Expert knowledge of meat and seafood fabrication, portion control, and aging techniques.
• Strong leadership and training skills.
• Meticulous attention to detail regarding quality, hygiene, and waste control.
• Good understanding of inventory and cost management.
• Relevant certifications in butchery and food safety.
• Ability to work in a cold environment.
