Position: Sous Chef – Butcher
Responsibilities:
- Manage the hotel’s butcher shop, overseeing all meat and seafood preparation.
- Ensure all proteins are portioned, prepared, and stored according to the highest standards.
- Train and supervise the butcher team in proper cutting techniques and safety procedures.
- Manage inventory, ordering, and quality control of all meat and seafood products.
- Maintain a clean, sanitary, and organized butchery, adhering to HACCP standards.
Qualifications:
- Proven experience as a Head Butcher or Sous Chef in charge of butchery in a large hotel or food service operation.
- Expert knowledge of meat and seafood fabrication, portion control, and aging techniques.
- Strong leadership and training skills.
- Meticulous attention to detail regarding quality, hygiene, and waste control.
- Good understanding of inventory and cost management.
- Relevant certifications in butchery and food safety.
- Ability to work in a cold environment.
