Position: Sous Chef – Japanese Restaurant (Imamura & Shaku)

Responsibilities:

  • Oversee the daily operations of the Japanese culinary team to ensure high quality standards.
  • Assist in menu development for Imamura & Shaku, focusing on authentic Japanese techniques and ingredients.
  • Manage food preparation and presentation to maintain consistency and guest satisfaction.
  • Train and mentor junior kitchen staff on specialized Japanese cooking methods.
  • Ensure strict compliance with food safety and hygiene regulations within the kitchen.

Qualifications:

  • Proven experience as a Sous Chef in a high-end Japanese restaurant or luxury hotel.
  • Expert knowledge of Japanese culinary traditions, including sushi, sashimi, and warm dishes.
  • Strong leadership skills to manage a diverse pre-opening culinary team.
  • Excellent organizational and problem-solving abilities in a fast-paced environment.
  • Commitment to maintaining culinary excellence and innovative food presentation.
  • Ability to work closely with the Executive Chef on recipe costing and inventory.
  • Effective communication skills in English to liaise with international guests.
