Position: Sous Chef – Japanese Restaurant (Imamura & Shaku)
Responsibilities:
- Oversee the daily operations of the Japanese culinary team to ensure high quality standards.
- Assist in menu development for Imamura & Shaku, focusing on authentic Japanese techniques and ingredients.
- Manage food preparation and presentation to maintain consistency and guest satisfaction.
- Train and mentor junior kitchen staff on specialized Japanese cooking methods.
- Ensure strict compliance with food safety and hygiene regulations within the kitchen.
Qualifications:
- Proven experience as a Sous Chef in a high-end Japanese restaurant or luxury hotel.
- Expert knowledge of Japanese culinary traditions, including sushi, sashimi, and warm dishes.
- Strong leadership skills to manage a diverse pre-opening culinary team.
- Excellent organizational and problem-solving abilities in a fast-paced environment.
- Commitment to maintaining culinary excellence and innovative food presentation.
- Ability to work closely with the Executive Chef on recipe costing and inventory.
- Effective communication skills in English to liaise with international guests.
