Position: CDP Garde Manger
Responsibilities:
- Lead the Garde Manger section, overseeing the preparation and presentation of cold food items, salads, appetizers, and buffet displays with high aesthetic standards.
- Ensure the quality and consistency of all cold kitchen products meet the premium standards of Grand Mercure Jakarta Kemayoran.
- Manage inventory, minimize waste, and control food costs within the assigned section.
- Train and mentor junior kitchen staff in proper cold preparation techniques and hygiene protocols.
- Maintain strict adherence to HACCP and all food safety regulations in the cold kitchen area.
Qualifications:
- Proven experience as a Chef de Partie (CDP) specializing in Garde Manger in a reputable 4-5 star hotel or high-volume culinary environment in Jakarta.
- Exceptional creativity and precision in food presentation and cold culinary artistry.
- Good managerial, interpersonal, motivational, and leadership skills to direct the cold kitchen team effectively.
- A strong sense of team spirit and service minded approach to internal and external demands.
- Thorough knowledge of inventory control and kitchen cost management principles.
- Excellent communication skills, both verbal and written.
- Ability to work efficiently under pressure and maintain high standards of quality.
