Position: Sous Chef (All Day Dining)
Responsibilities:
- Assist the Chef de Cuisine in managing the daily operations of the all-day dining kitchen.
- Supervise the preparation and presentation of high-quality dishes for breakfast, lunch, and dinner services.
- Train and mentor the kitchen brigade, ensuring consistency and adherence to recipes.
- Manage inventory, food costing, and ordering to control expenses and minimize waste.
- Ensure the kitchen operates in compliance with all food safety and sanitation standards.
Qualifications:
- Minimum of 5 years of culinary experience, with at least 2 years in a Sous Chef or senior Chef de Partie role.
- Experience in a high-volume, all-day dining kitchen within a 5-star hotel.
- Strong expertise in both international and Indonesian cuisines.
- Excellent leadership, training, and organizational skills.
- A creative approach to menu planning and buffet presentation.
- Good understanding of kitchen finance and cost management.
- A degree in Culinary Arts is highly desirable.
