Position: Sous Chef Butcher

Responsibilities:

  • Oversee the entire butcher section to ensure high quality meat and poultry processing
  • Manage inventory levels and coordinate with procurement for all meat and poultry requirements
  • Ensure the butcher section adheres to strictly Hyatt service and hygiene standards
  • Lead and train the butcher team to maintain high levels of operational excellence
  • Monitor meat aging and storage protocols to ensure freshness and quality property wide

Qualifications:

  • Minimum 3 years of experience in a senior butcher leadership role within a luxury hotel
  • Strong leadership skills with the ability to manage and inspire a technical workforce
  • Exceptional technical knowledge of meat cuts, aging, and professional butchery
  • Detailed oriented approach to cost management and operational efficiency
  • Fluent in English for professional leadership and international reporting
  • Commitment to consistent quality and professional culinary excellence
  • Relevant culinary certification is highly regarded
